This wine is full bodied but fresh, with white flowers, notes of earth and wild fauna, citrus notes and the minerals that come through with shale soils. In the mouth, its richness makes you fell you are drinking something expensive. Thomas recommends drinking with wild Salmon, Crab with coriander or with expressive cheeses like valançay, comté or chèvre, mmm tasty.
