PF Ponce Pie Franco is a red wine from Manchuela produced by Bodegas Ponce. This wine is a varietal Bobal. The harsh weather conditions ensure that the vineyard plantations are of very low production but with high aromatic concentration. PF Ponce Pie Franco comes from small vineyards 60 years old. The maturing of grapes for PF Ponce Pie Franco is longer than the other clusters. Alcoholic fermentation lasts up to a month and uses indigenous yeasts. These are able to metabolize sugars completely. The subsequent malolactic fermentation takes place on lees in French oak barrels of various capacities and PF Ponce Pie Franco is finally aged for 10 months in French oak barrels of 600 litres. Bodegas Ponce is located in the town of Iniesta, located at 870 metres altitude in the province of Cuenca. PF Ponce Pie Franco is bottled unfiltered and unclarified to keep its own personality.
