Description
The first release from Ballykilcavan was distilled from barely grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co. Laois. His fertile fields are sheltered by ancient woodland on some of the best soil in the region. For maturation 45% of the casks were first-fill American oak, 28% were French oak and 27% of the casks were previously used to age vin doux naturel (fortified wines). A light hay and very oily appearance. Berries with fresh foliage, redcurrants and grapes first welcome the nose with a vibrant, freshly cut grass aroma. Cooked bananas with brown sugar and plenty of heat greet the palate with mulled wine and cinnamon coming through. A dry, oily lasting finish. Only 8640 bottles have been produced, with only 1500 available in the UK.Details
