Harvest done by hand. Double manual selection of clusters and berries. Maceration period of 12 days 8ºC. Fermented with native yeasts during 15 days in stainless steel tanks at temperatures between 27 and 29ºC. Malolactic fermentation in French oak barrels. Aged in French oak barrels for 12 months.
