Charlotte and Thomas Carsin embarked on this new chapter in 2008. They converted to organics on this quartz and sandstone schist soil in the Layon Valley. This wine is made using native yeasts and whole bunch fermentation and then aged on old cask for 30 months. The wood ageing softens out the rough Cabernet Franc edges and finishes the wine in a distinctly velvety and pure texture. Notes of graphite, mint ripe damson and a touch of dark chocolate.
