Monovarietal organic Monastrell wine from Jumilla. Harvest and selection of grapes by hand. Spontaneous fermentation with 50% whole grapes in cement tanks simulating traditional wineries. Soft pressing and malolactic fermentation in 5000 liter oak foudre. Aged in Foudre.
