    Born and bred in Marsannay you’d think that Sylvain Pataille would have had wine in his veins. He is not from a winemaking family however, and went to wine school in Beaune from the age of 14. Vineyard holdings are managed according to organic and biodynamic principles and when replanting is necessary is is undertaken via massale selection with cuttings from some of the most outstanding producers in Burgundy. In the winery SO2 is used to a minimum, and oak is more of a vessel than a flavouring, aiding the elevage.

    Since its foundations in 1731, Bouchard Père et Fils has put together an exceptional vineyard holding along the Côte d’Or. The fact that the firm owns land in some of the most prestigious of Burgundy’s terroirs, makes its objectives an obligation: constant progress towards perfection. A ‘great wine’ demands time and utmost care at every step in its production. This is why the firm calls upon the most suitable equipment (such as the new winery, inaugurated in 2005) and a team that shares the highest standards in terms of craftsmanship and creativity. The name of this " climat " with rocky sub-soil comes from the great number of big flat stones called " laves " in the area. These natural stone slabs were used by the Merovingians for their tombs. One of these can be seen in the Louis XI room in the Château in Beaune. Bouchard Père & Fils owns 3.94 hectares of Savigny Premier Cru acquired at the beginning of the 20th century

    Domaine Henri Boillot, in Volnay, has become, amongst others, a specialty of Puligny-Montrachet. For several generations (since 1885 precisely), in the southern part of the Côte de Beaune, this discreet but renowned 15-hectare domaine, well known by connoisseurs, has vinified and matured a remarkable palette of prestigious wines on the largest terroirs. Its classy, vigorous and masterfully harmonious grand crus of the Côte de Beaune have particularly established its reputation. Seven hectares of white wine is distributed among the Puligny-Montrachet Premier Cru (Les Perrières, Les Pucelles, Clos de La Mouchère), Meursault Premier Cru Les Genevrières and Savigny-les-Beaune Premier Cru Les Vergelesses. Today, it is the son Henri who has taken over the reins of the family vineyard, and in 1996 he added a trading business, exclusively for whites, and in which each premier cru or grand cru is produced by a single supplier in order to preserve the authenticity of the terroir. The whites, generally early, improve superbly over four to five years. This is thanks to the rigorous and constant ploughing of the vines in a sustainable manner (8 to 10 times a year), as well as the fact that no herbicides are used, yields are limited (40hl / ha on average) and harvesting is manual and conducted as late as possible. Note that in 2005 the domaine unified its name when Henri Boillot bought out Jean Boillot.

    Milan Nestarec is a young grower based in Moravia, a region in the Czech Republic that lies just 15km from the northern Austrian border. Milan’s father planted the 8 hectares of vines in 2001 across two wine growing municipalities: Moravský Žižkov and Velké Bílovice. This region has a lot in common with Austria, from the loess soils to the grape varieties that flourish here. Milan works with a host of varieties including Riesling, Neuburger, Welschriesling, Pinot Noir and the lesser known Hibernal. The yield is kept low in the vineyards and the focus is always on quality and expressing the full potential of each variety. Milan is a member of the ‘Autentisté’ group - a community of winemakers making authentic wines that strive to express the true character of the land. No herbicides are used in his vineyards and the vines are worked strictly organically. Milan also vinifies everything with indigenous yeasts and bottles without fining or filtration.

    Thomas Bachelder will be known to many of our customers as the first winemaker at Le Clos Jordanne. He has now gone out on his own, together with his wife, Mary Delaney. In their first vintage in 2009, they made three Chardonnays from three different regions - Burgundy, Niagara and Oregon. Using the same winemaking techniques in each region (wild yeasts, minimal intervention and the same barrel makers), the difference in the wines is solely down to the vineyard which makes for some very interesting blind tasting results. The Oregon Chardonnay shows a more robust, honeyed character compared to the Niagara Chardonnay which is particularly fresh and lifted with aromas of white stone fruits.

    Michel Gay began in 1992 after he and his brother split up their century old family estate and decided to go it alone. Beginning with a meager 6.5 hectares in 92, the domaine has grown a bit to just over 10 hectares today. In 2000, the fifth generation winemaker, Sébastien Gay returned to the domaine following his studies in Beaune and immediately set about improving things. This small estate in the Cote de Beaune is comprised of vines that average more than 40 years old with many parcels coming in over 60 years of age. Holdings include the always exceptional Chorey‐ les‐Beaune, Aloxe‐Corton, Savigny‐les‐Beaune 1er Crus Serpentières and Vergelesses, three premier crus in Beaune, Toussaints, Coucherias, and Greves, as well as a small plot of Corton in the Renardes vineyard. Recently, Sébastien planted a very small parcel in Coucherias to Chardonnay that has yielded very promising results already.

    Maison Ambroise is a long-established, small négociant house, who operates on 21 hectares of their own vineyards and purchase grapes from another 3. They own vines in Prémeaux, Nuits-St-Georges, Ladoix, Meursault, the hill of Corton, Vosne-Romanée (with some Grand Cru Echezeaux!), Gevrey-Chambertin, Vougeot, Beaune and as far as Saint-Romain. As always with similarly parcelled estates in Burgundy, logistics is key. Bertrand Ambroise was recently joined by his son Francois and daughter Ludivine, they have just received their organic certification (2013). Ludivine explained the move to organic viticulture is one of true belief as she lost her grandfather due to illness caused by chemicals used in the fields. Harvested manually, neither filtered nor fined, the wines are classic and expressive with distinct terroir-influenced personalities.
