    Claus Preisinger Ancestral comes from vines planted on gravel, limestone and marl soils in the town of Gols (Neusiedl). He uses biodynamic agriculture with organic treatments, avoiding chemical products that could harm the natural balance of the terroir. The harvest is carried out manually at the optimum point of ripeness. The wine is a sparkling wine made according to the ancient method. Once the grapes have been pressed and there is a resulting must, it ferments spontaneously. Before the fermentation process has finished, it is bottled and closed with a lid so that carbon dioxide is naturally created. Made with an unusual local grape, Claus Preisinger Ancestral St. Laurent is an example of the expertise this viticulturist has when it comes to producing wines using the ancient method. A whirlwind of fruit and juiciness.

    Eiswein refers to the process of allowing the grapes to freeze on the vine during a frost. The grapes are then picked and pressed quickly so that the frozen water content is separated from the now concentrated grape juice. The production of Eiswein is risky because of the risk that a frost will not come soon enough or the grapes rot beforehand. This means that Eiswein is more expensive and certainly rarer than conventional sweet wines, and the quality is astounding. Immense concentration of pure, rich peach and apricot fruits, balanced perfectly by cleansing citrus acidity.

    Judith Beck’s winery is run as a family business. Since 1976 the area under vine increased from 5 to 15 ha. Most of the vineyards are situated at the Wagram of the Parndorfer Plate, the most important site of the region. And from 2007 Judith has produced wines in accordance with biodynamic principles. OUT is a blend of 60% Blaufrankisch and Zweigelt. It is a delicious, bright,and juicy red with strawberry, plum and raspberry ending with spicy and savoury notes. Medium-bodied, super moreish, perfect to drink on its own or with charcuteries, white meat, poultry dishes or will accompany an array of vegetarian dishes.

Puszta, in Hungarian, translates to prairie when the source vineyard sites were once part of Hungary. This wine should be served chilled.
