Description
The vineyards in the Costières de Nîmes area close to the Mediterranean from where this wine comes benefit from extensive sunshine and the cooling maritme effect of being near the sea. Made from 50% Syrah, 30% Mouvedre and 20% Grenache it has lots of wild thyme herbiness on the nose and a really clean, fruity and spicy palate with supple tannins. The vines are 25 years old and yields are around 50 hl/ha. Grapes are destemmed and fermented traditionally for 15 days to ensure a good balance of fruit and tannins.
Do not hesitate to give it twenty minutes in the fridge in hot weather and drink with red meats, hard cheese and grills.
