    Producer: Walsh Whiskey opened its €25 million distillery in Royal Oak, County Carlow in June 2016, becoming the only independent Irish whiskey producer to make malt, pot still and grain liquid. The casks for this rare whiskey are hand-picked by Bernard Walsh every year and 1800 bottles were released in 2016.

    Nose: Aged in first fill Bourbon barrels, notes of vanilla and toffee on the nose as well as slight hints of ginger and drak fruits.

    Taste: A creamy medium-bodied whiskey with great structure. Notes of dark chocolate, vanilla and a subtle spice. Smooth in the mouth for a cask strength whiskey.

    Finish: Lingers in the mouth with hints of oak, butterscotch and chocolate. Leaves a nic warmth before it dissipates.

In the early 19th Century, all trade with Imperial China was conducted at the southern port of Canton, by order of the emperor. Among the main commodities purchased there were silk, porcelain, tea and cassia. We searched the wholesale tea market at Canton for a very particular variety of oolong tea and combined it with cassia bark (sometimes known as Chinese cinnamon and often used in place of cinnamon) and osmanthus, a flower with a wonderfully sweet fragrance that is redolent of the very streets of Canton.     Extremely rare, and expensive, our virgin Japanese mizunara, comes from Hokkaido, the rugged most northern island of Japan. It is coopered to order in Japan's only independent cooperage, by Japan's oldest cooper. Mizunara amplifies much of what is already there while layering on more vanilla smoothness, sandlewood notes and even a little coconut, or gorse flower if you're from our neck of the woods.

    This whiskey has very different and exotic flavours compared with what you'd expect from an Irish single malt. And there's not a lot of it around! This is one to snap up and savour.

    Taste: Syrupy, silky and fruity. Flavours of lemon meringue, orange, pears, apples, pineapple and all spice.

    Taste: Soft and silky with a little wood smoke. Charred pineapple, orange zest, lemon meringue. Well-balanced and fruity.

    Finish: It is warming with a lvoely fruity finish.

    Nose: A nice balance of earthiness, fruit and spice. Touches of chocolate, oak, char, mocha, dried citrus peel, cinnamon and nutmeg.

    Taste: Shows some classic Powers character. The oak is vibrant but well balanced. Touches of toasted spices, roasted nuts, cocoa, vanilla and honey.

    Finish: The oak persists to the end giving some lovely complexity.

    Midleton Very rare was first released in 1984. Only 50 casks are released each year which makes them very collectible, especially older and harder to find vintages. The whiskeys used in the blend are hand picked by the Master Distiller, all triple distilled and have aged between 12 and 25 years in individually Bourbon or Sherry casks.

    Style: Blend, 40%.

    Nose: Vibrantly fruity with aromas of apricots, pineapple, red apples, stem ginger, marzipan and fruit bread.

    Palate: Soft, smooth and juicy. Flavours of apricot, dried citrus peel, honey, pineapple and mango.

    Finish: Delicate spices lead through to the finish.

    Last time it was released it was in 1960s, now Red Spot is finally back. An exciting whiskey by the Mitchell family, a 15 year old whiskey made up of 3 parts aged in different casks, Bourbon, Spanish sherry butts and Sicilian Marsala wine casks, and then blended together. The Red Spot name (as for the Yellow & Green Spot) comes from the family tradition of marking the casks of different ages with spot of different colours.

    Nose: rich and intensewith black cherry, cooked fruits note and a hint of mango.

    Taste: A mix of ripe fruit sweetness from the Marsala seasoned wine casks. While the fruit remains, sweet red pepper and cracked black pepper and some spiciness, finished by notes of American oak and barley.

    Finish: An extra long infusion of fruit and spices. Strictly 1 per customer max
