Claus Preisinger Ancestral comes from vines planted on gravel, limestone and marl soils in the town of Gols (Neusiedl). He uses biodynamic agriculture with organic treatments, avoiding chemical products that could harm the natural balance of the terroir. The harvest is carried out manually at the optimum point of ripeness. The wine is a sparkling wine made according to the ancient method. Once the grapes have been pressed and there is a resulting must, it ferments spontaneously. Before the fermentation process has finished, it is bottled and closed with a lid so that carbon dioxide is naturally created.
